- Mix the mascarpone, elderflower syrup and milk until smooth. Whip the cream until stiff. Roughly crumble the amarettini and set aside 3 tablespoons.
- Mix the mascarpone cream and cream loosely. Fold in the amarettini crumbs and a good 2/3 of the frozen raspberries.
- Immediately pour the dessert into a bowl or serving glasses. Let the cream stand for 2-3 hours until the raspberries are just thawed.
- Sprinkle the mascarpone cream with the remaining amarettini and raspberries before serving.
