For the set:

- Peel the onion and clove of garlic and roughly cut into cubes. Put them in a saucepan with a little olive oil.
- Wash the tomatoes, remove the stalk, cut into small pieces. Peel the cucumber and cut into cubes. Wash and clean the peppers and cut into cubes.
- Put everything together in the pot. Add the rest of the oil + basil and mix finely. Season to taste with salt, pepper, sugar and balsamic vinegar.
- Pour through a sieve or strain with a liquor Lotte and season again to taste. Refrigerate.
- Serving:
- Pour the cold soup onto a plate or into a cup and garnish with a little pesto. Finally, pour some freshly grated parmesan over the soup.
