Peel the ginger and cut a little for the taste intensity. Squeeze the lemongrass, either press it with a meat mallet or the back of a knife, and chop it up so that it fits into a tea infuser. Put both ingredients in a tea infuser. Pour into a cup and pour the boiling water over it, let it steep for about 10 minutes. Add the honey and dissolve.
Great for cold winter days, nice and warm inside. Those who like a certain spiciness can let the ginger steep even longer, the longer the tea steeps, the spicier it becomes.
