- Peel and core the pears and cut into eighths.
- Peel the ginger and cut into thin slices. Put the wine, star anise, sugar and butter in a small saucepan and bring to the boil.
- Bring the pear wedges to the boil in the brew, cool in it and cover and let steep overnight.
- The ginger pears go well with chocolate ice cream, chocolate sauce, chocolate mousse as well as with duck breast or Asian-style fish fillets.
