- Caramelize the sugar in a pan, deglaze with water.
- Add the grated ginger, lime zest and lime juice and simmer briefly. Pass through a fine sieve and refrigerate.
- When it`s well chilled, put it in the ice cream maker.
- To serve, fill the sorbet into small, ice-cold glasses, garnish with a sage leaf and rub long pepper over them.
