Instructions

  1. Caramelize the sugar in a pan, deglaze with water.
  2. Add the grated ginger, lime zest and lime juice and simmer briefly. Pass through a fine sieve and refrigerate.
  3. When it`s well chilled, put it in the ice cream maker.
  4. To serve, fill the sorbet into small, ice-cold glasses, garnish with a sage leaf and rub long pepper over them.
