Ingredients
- 200 g suar
- 350 ml water
- 6 cm ginger
- 1 lime (s), juice and zest
- 1 ½ lime (s), juice
- some pepper, (long pepper)
- 20 leaves sage, more white, alternatively mint

- Caramelize the sugar in a pan, deglaze with water.
- Add the grated ginger, lime zest and lime juice and simmer briefly. Pass through a fine sieve and refrigerate.
- When it`s well chilled, put it in the ice cream maker.
- To serve, fill the sorbet into small, ice-cold glasses, garnish with a sage leaf and rub long pepper over them.
