Ingredients

  • 8 fig (s), fresh
  • 50 grams sugar
  • 100 ml water
  • 2 tablespoon lemon juice
  • 200 ml sparkling wine
  • 2 cl rum

Instructions

  1. Peel the figs thinly, put one aside and puree the rest in a blender. Briefly bring the sugar to the boil with the water and allow to cool over ice water. Stir in the fig puree, add lemon juice, sparkling wine and rum.
  2. Put the mixture in the ice cream maker and let it freeze slowly. Then serve immediately, garnished with wedges of the retained fig.
