Peel the carrots and cut into small slices. Wash the spring onions and also cut into rings.
Heat the butter in the pan and add the vegetables. Steam until the carrots are soft. If you like, you can also leave it a little crisper. Season with salt, sugar and pepper and mix in the parmesan. Sprinkle with parmesan again before serving.
Goes very well with strong meat such as duck, goose, lamb or just with baguette and wine.
