Cut the carrots and zucchini into julienne strips. Finely dice the onion. Fry the onion with a little oil in a pan, then add the vegetables and fry briefly, season with salt and pepper. Pour in some water and simmer for approx. 5 minutes.
In the meantime, cook the gnocchi according to the instructions on the packet. Put the gnocchi in a colander and drain. Add the drained gnocchi to the pan with the vegetables, sprinkle with parmesan cheese and mix everything together. Arrange on plates and decorate with a little parsley.
