Heat a little oil (not too hot). Break the walnuts a little and add. Panning. As soon as the oil is absorbed, pour the maple syrup over it. As soon as this has caramelized, add a little butter. Salt at the end. Put aside.
Meanwhile, liquefy the Gorgonzola in the cream and milk in a saucepan. Add pepper and a little thyme.

Boil water and season with salt, prepare the gnocchi according to the package insert or a gnocchi recipe.
Pass the cheese / cream-milk mixture through a sieve, add the spinach and nut mixture. Pepper and salt again.
Serve the gnocchi, pour the sauce over it, rub a lot of parmesan over it.
