DO NOT strain the quark through a sieve, but immediately mix thoroughly with sugar, egg yolk, vanilla sugar, butter and cinnamon. Fold in the raisins. Carefully fold in the egg whites.
Fill into a very large springform pan or casserole dish, but better place on a deep baking sheet.
Bake on the middle rail at 175 degrees for approx. 60 - 70 minutes.
If necessary, cover towards the end of the baking time so that it does not get too dark.
If you like, you can bake the cake with a shortcrust pastry base.
