Peel the potatoes and finely grate them raw. Add the flour, but the dough should still be sticky and add a little salt to taste.
Bring water to a boil in a large saucepan. Now press the dough through a spaetzle sieve. When the halušky swim up, they are done.
Dice the bacon and fry in the oil in a hot pan. If you don`t like the bacon cubes, just fry the whole bacon and take it out at the end. It`s all about the taste! Add the halušky and finally add the cottage cheese to the pan. Season to taste with salt.
Tip: It tastes even better with a little cream or crème fraîche! Some also sprinkle grated cheese over their portion.
Bryndza: Unfortunately, this sheep cheese is only available in Slovakia or Southeast European countries. But can be replaced wonderfully with cottage cheese.
