Instructions

  1. Boil / steam the cleaned beans until they are firm to the bite, rinse under cold water.
  2. Roast the walnut pieces at 175 ° C in the oven on a tray for about 3-7 minutes, be careful not to burn them. Chop into quarters or smaller.
  3. Cut the prosciutto or bacon into 1/2-cm pieces and roast in a pan for 5-6 minutes. The prosciutto with a little oil and a bit shorter. Remove from the fat and place on kitchen paper. Leave the fat in the pan.
  4. Put the cooked green beans in the pan and warm up for about 2 minutes. Add the diced Roquefort, stir until the cheese just begins to melt, this takes about 30 seconds. Add the walnut pieces, sprinkle with plenty of pepper and serve immediately.
  5. Delicious as a light main course with some bread, but also great as a side dish, especially with lamb (my favorite). Best with fresh beans, nice green and crunchy.
