Instructions

  1. Green spelled is spelled that has been harvested in a semi-ripe state. The grains are kilned in beech wood smoke, which creates a characteristic, spicy and hearty aroma. Green spelled is traditionally grown in the Swabian and Franconian Alb.
  2. Simmer green spelled in a liter of stock for 40 minutes and set aside.
  3. Peel the potatoes, carrots and kohlrabi and cut into 5 mm cubes. Cut the cauliflower and broccoli into tiny florets. Cut the leek into fine rolls, broccoli stem, onion and garlic into tiny cubes. Cut the meatloaf into rolls.
  4. Heat the olive oil in a sufficiently large stock pot and sauté the leek, onion and garlic. Add the potatoes, carrots and sausages, sauté as well, deglaze with the two broths and bring to the boil.
  5. After 5 minutes of cooking, add the green kernels with the broth, kohlrabi, cauliflower and broccoli, mix well and cook for another 5 minutes.
  6. Season to taste with pepper. Salt probably won`t be needed, that`s what the two broths bring with them.
