Instructions

  1. Devein the shrimp by making a slight cut along the back of each and removing the intestines.
  2. Thread 5 shrimp onto a skewer and place in a bowl. Repeat with remaining shrimp to make 4 skewers total.
  3. Chop 2 garlic cloves and mix with 2 tablespoons olive oil, 2 tablespoons lime jam, 1 tablespoon honey, and salt and pepper to taste.
  4. Pour the marinade over the shrimp and turn the skewers several times to coat thoroughly.
  5. Cut 1 chilli pepper into small rings and sprinkle over the shrimp.
  6. Refrigerate for at least 2 hours, turning the skewers occasionally.
  7. Grill over high heat until the shrimp are just pink.
