Instructions

  1. Remove the scales from the sea bream and wash it, or ask the fishmonger to prepare it for cooking.
  2. Season the inside and outside of each fish with salt and pepper.
  3. Peel and roughly chop the garlic cloves. Wash the parsley sprigs and pat dry.
  4. Stuff the belly of each fish with the chopped garlic and parsley.
  5. Using a sharp knife, score the outside of each fish 3-4 times at an angle down to the middle bone.
  6. Brush all sides of each fish with olive oil.
  7. Grill the fish on medium-high heat for 10 min on each side, until the flesh is opaque and flakes easily.
  8. Drizzle each fish with 1 tablespoon of lime-infused olive oil and serve with a lemon quarter.
