Halve the avocados, core them and press them through a sieve (please only use really ripe avocados). Peel and dice the onion, peel off the cloves of garlic and press through a garlic press, peel, core and dice beef tomatoes, core the chilli peppers (!).
Add a few drops of lime juice (this ensures that the color of the avocados stays nice and strong green)
Put everything together in a bowl and chop up with a hand blender. Season to taste with pepper and salt.
Decorate with cress et Voilá! Bon Appetit!
Guacamole is served either classically with corn chips, on toast or on bagels.
