Cut the schnitzel into thin strips, quarter the onion and thinly slice it, peel and finely dice the garlic.
Put everything in a bowl, sprinkle with 6 tablespoons of gyros spice, pour the olive oil and Metaxa over it as you feel, mix well and let it steep for 12 hours in the refrigerator, stirring occasionally.
Mix in the rice noodles and pizza tomatoes, season with instant vegetable stock and put everything in a large, flat baking dish.
Core and finely dice the chilli pepper, cut the olives into small pieces and mix everything with the sheep`s cheese, crushed with a fork. Stir in sour cream and cream, season with gyros seasoning, stir in a dash of Metaxa and spread everything over the casserole.
Cover the casserole with aluminum foil and cook for approx. 40 minutes, then bake for approx. 25 minutes without foil and then let it stand for 5 minutes in the switched-off oven.
