Clean, wash and chop the peppers. Clean and wash the mushrooms, halve or quarter if necessary.
Heat the oil in a wide pan and fry the peppers and mushrooms in it for about 3 minutes, then remove. Sear the meat in the fat in portions for approx. 5 - 6 minutes. Put all the meat, mushrooms and peppers back into the pan. Stir in the Metaxa and tomato paste and bring to the boil. Stir in the sour cream.
Put the gyros in a baking dish and sprinkle with the cheese. Baked golden yellow in the oven for about 10 minutes and garnished with fresh herbs.
