Ingredients
- 250 g mushrooms, fresh
- 2 tablespoons oil
- 750 g pork, sliced, yros style, seasoned or homemade
- 3 tablespoon Metaxa, or brandy
- 2 tablespoon tomato paste
- 2 tablespoon sour cream or crème fraîche
- 100 g cheese, rated
- some stalks herbs, fresh ones, e.g. parsley / thyme / rosemary etc.
- 2 red pepper (s)

- Preheat the oven to 200 °.
- Clean, wash and chop the peppers. Clean and wash the mushrooms, halve or quarter if necessary.
- Heat the oil in a wide pan and fry the peppers and mushrooms in it for about 3 minutes, then remove. Sear the meat in the fat in portions for approx. 5 - 6 minutes. Put all the meat, mushrooms and peppers back into the pan. Stir in the Metaxa and tomato paste and bring to the boil. Stir in the sour cream.
- Put the gyros in a baking dish and sprinkle with the cheese. Baked golden yellow in the oven for about 10 minutes and garnished with fresh herbs.
- Serve with flatbread or roasted potatoes.
