Squeeze the orange and lemon and put the juice with the apple juice in a saucepan. Lightly mortar the star anise, cloves and allspice and add. Add the other spices, almonds, raisins and honey as well.
Let simmer over a mild heat for about 20 minutes. Stir occasionally, season to taste and season if necessary, then filter and serve. Sweeten with rock candy or honey as required.
Can be refined with calvados or with Indonesian arrack.
