Ingredients
- 1 ½ liter apple juice
- 2 star anise
- 1 stick cinnamon
- 0.5 teaspoon ½ cardamom, ground
- 2 carnation (s)
- 3 grains allspice
- 1 pinch mace, ground
- 0.5 teaspoon ½ ginger
- 20 g almond (s)
- 20 g raisins
- 1 vanilla pod (s)
- 1 tablespoon honey
- 1 orange (s)
- 1 lemon (s)
- possibly rock sugar

- Squeeze the orange and lemon and put the juice with the apple juice in a saucepan. Lightly mortar the star anise, cloves and allspice and add. Add the other spices, almonds, raisins and honey as well.
- Let simmer over a mild heat for about 20 minutes. Stir occasionally, season to taste and season if necessary, then filter and serve. Sweeten with rock candy or honey as required.
- Can be refined with calvados or with Indonesian arrack.
