Cut the red onion into cubes and fry briefly in the pan with a little oil until translucent, then set aside and allow to cool.
Cut the hand cheese (with or without caraway seeds) and the apple into cubes and place in a bowl. Chop the chives and add the cooled onions to the bowl and mix everything together with salt, pepper, vinegar and oil.
You are welcome to put it in the refrigerator for one night so that everything can flow well - but an hour will do too.
Just before serving, add walnuts or pumpkin seeds, stir again, done.
A glass of apple wine, sour or pure, goes perfectly with it.
