Cut the hand cheese into small cubes, the spring onions and the chives into fine rings.
Mix the dressing with sour cream, crème fraîche and mustard. Squeeze a clove of garlic and add it. Season to taste with lemon juice, paprika powder, salt and pepper, mix with the ingredients and let steep in the refrigerator for a few hours. Season again to taste before serving.
Tastes wonderful with apple cider with baguette or fresh farmer`s bread with butter and convinces even the last Handkäs-hater.
