Instructions

  1. Remove the green from the leek except for 1/3. Cut the leek into fine rings.
  2. Quarter and core the paprika and cut into strips.
  3. Cut the onions into very fine wedges and the bread into large pieces.
  4. Clean and wash salads.
  5. Pluck the radicchio into bite-sized pieces.
  6. Heat the fat in a coated pan. Fry the bread cubes all around until golden brown. Remove and drain on kitchen paper.
  7. Add 2 tablespoons of oil to the pan and heat. Fry the leek and paprika for about 5 minutes, turning. Season with salt and pepper.
  8. For the marinade:
  9. Cut the chives into small rolls. Squeeze the lemon. Mix the lemon juice with the chives, salt, pepper and sugar. Beat in 3 tablespoons of oil.
  10. Arrange the prepared salad ingredients in portions on plates. Pour marinade over it and serve immediately.
  11. Extra: Add another 100 g of sheep`s cheese to the salad.
