- Remove the green from the leek except for 1/3. Cut the leek into fine rings.
- Quarter and core the paprika and cut into strips.
- Cut the onions into very fine wedges and the bread into large pieces.
- Clean and wash salads.
- Pluck the radicchio into bite-sized pieces.
- Heat the fat in a coated pan. Fry the bread cubes all around until golden brown. Remove and drain on kitchen paper.
- Add 2 tablespoons of oil to the pan and heat. Fry the leek and paprika for about 5 minutes, turning. Season with salt and pepper.
- For the marinade:
- Cut the chives into small rolls. Squeeze the lemon. Mix the lemon juice with the chives, salt, pepper and sugar. Beat in 3 tablespoons of oil.
- Arrange the prepared salad ingredients in portions on plates. Pour marinade over it and serve immediately.
- Extra: Add another 100 g of sheep`s cheese to the salad.
