Fry the onions in the butter and then add the remaining vegetables, cut into small pieces. Season with herbs, salt, pepper and whatever else you like. I take e.g., often also curry or cumin and paprika powder.
Then crack the eggs and mix with the Gouda and almond flour. This mixture is very vegetable. I like it that way, but if you don`t like it that concentrated, just take 2 more eggs and then about 75 g Gouda and 40 g almond flour.
Mix everything, fill into muffin tins and place in the oven for about 30 minutes at 180 degrees top / bottom heat.
