Ingredients

  • 3 egg (s)
  • 50 g Gouda, rated
  • 25 g almond flour
  • 1 shallot (s), finely chopped
  • 1 spring onion (s), finely chopped
  • 350 g veetables (peppers, mushrooms, cauliflower, peas, corn)
  • Herbs
  • salt and pepper

Instructions

  1. Fry the onions in the butter and then add the remaining vegetables, cut into small pieces. Season with herbs, salt, pepper and whatever else you like. I take e.g., often also curry or cumin and paprika powder.
  2. Then crack the eggs and mix with the Gouda and almond flour. This mixture is very vegetable. I like it that way, but if you don`t like it that concentrated, just take 2 more eggs and then about 75 g Gouda and 40 g almond flour.
  3. Mix everything, fill into muffin tins and place in the oven for about 30 minutes at 180 degrees top / bottom heat.
  4. I used a 9-well silicone mold for muffins.
