Instructions

  1. Put about 200 g of flour in a small bowl. Crumble the fresh yeast in the middle. 1 teaspoon of sugar and a little water. Heat on a low flame (level 2 of 12) and stir until the yeast has risen. Now warm up 500 ml of milk.
  2. Put approx. 500 g flour and 2 teaspoons of salt in a large bowl. 2 eggs in the middle, warm milk, dry yeast and yeast that has already risen. First mix with a spoon, then knead by hand. Heat approx. 250 ml of oil and slowly add to the dough (this will also get your hands clean again). Knead the dough until smooth and either thicken with flour or stretch with oil. Then cover and let rise (about 20 minutes).
  3. Prepare two deep pans, each with a packet of jerky, a finely chopped onion and clove of garlic. Peel and quarter the potatoes so that both pan bottoms are covered, but do not add yet. When the dough has risen, make about 20 portions of the same size out of it, ideally form balls and place on a floured surface so that they don`t stick. Now press a ball flat and pull it apart a little while walking along the edge. Do this with a second ball as well.
  4. Now drizzle some oil on one of the two flatbreads, distribute it on top and place the second flatbread on top so that it also absorbs some oil. Now pull both flatbreads apart again at the edge until the dough is nice and thin. Now simply roll up / fold the thin flatbreads with the oily side inwards and, since that would be a long sausage, make a knot in it. Repeat this with all balls.
  5. Now sauté the jerky meat, onions and garlic with a little oil in the prepared pans until the onions are translucent. Add water and season with salt, pepper, tomato paste and clear broth, reduce a little. Now spread the potatoes on top so that the bottom of the pan is covered.
  6. Put steamed noodles in a circle on top, squeeze something. One should also fit in the middle. Put the lid on and simmer over low heat (level 3 of 12) for about 40 minutes. If there was too much liquid in the pan, it can boil over, but then just turn the stove down, never remove the lid, otherwise everything will collapse. The steamed noodles will now slowly rise and steam will escape from the pan, which you have to sniff towards the end to see whether the steamed noodles are ready. The jerky meat would definitely make you smell if it was too late.
  7. When the time comes, simply take the steamed noodles out of the pan, as well as the potatoes with the jerky meat. I don`t need any other side dishes, except maybe a delicious sauce. You can also add a roast with a lot of sauce.
