- Bring a saucepan of water to the boil and season with salt.
- Mix the flour, salt, nutmeg, herbs and eggs together well.
- It should be a tough batter.
- Use a knife and a board to scrape small spaetzle from this mixture into the boiling salted water.
- If they swim to the top, take them out and immediately soak them in cold water (in a separate bowl).
- Take out and serve or recycle.
