Boil the beets, cool, and peel. Cut the beets into slices and place on a plate. Drizzle with vegetable oil. Layout the olives.
Remove the zest from the orange on a grater. Peel the orange. Cut the pulp into small cubes. Mix the pulp and zest with sugar, put in a skillet and simmer the mixture by half over low heat.
