Instructions

  1. Cut the butter into cubes ice cold.
  2. Mix the egg yolk with the zest of the lemon, 3 teaspoons of lemon juice, salt, pepper and a pinch of sugar and beat with a whisk over moderate heat to a thick cream.
  3. Slowly add the cold butter cubes and gradually stir in the yogurt. If necessary, add a little more seasoning.
  4. Especially good with shrimp and other marine animals.
