Ingredients
- 50 g butter
- 100 g yourt, 10%
- 2 egg yolks
- 0.5 ½ lemon (s), for zest and juice
- 1 pinch (s) sugar
- Salt and pepper, white.

- Cut the butter into cubes ice cold.
- Mix the egg yolk with the zest of the lemon, 3 teaspoons of lemon juice, salt, pepper and a pinch of sugar and beat with a whisk over moderate heat to a thick cream.
- Slowly add the cold butter cubes and gradually stir in the yogurt. If necessary, add a little more seasoning.
- Especially good with shrimp and other marine animals.
