- In a small bowl, mix the olive oil with the pressed garlic, salt, pepper, thyme, and cayenne pepper.
- Scrub the small potatoes without peeling them and cut into quarters.
- Place the potato quarters in a plastic bag, add the seasoning oil, and knead vigorously for 1 minute until the potatoes are evenly coated.
- Transfer the coated potatoes to a baking tray.
- Bake in a 200°C (392°F) oven for 30-45 minutes until golden and tender.
- Serve with roasted meat, or on its own with spicy quark or sour cream.
