Instructions

  1. In a small bowl, mix the olive oil with the pressed garlic, salt, pepper, thyme, and cayenne pepper.
  2. Scrub the small potatoes without peeling them and cut into quarters.
  3. Place the potato quarters in a plastic bag, add the seasoning oil, and knead vigorously for 1 minute until the potatoes are evenly coated.
  4. Transfer the coated potatoes to a baking tray.
  5. Bake in a 200°C (392°F) oven for 30-45 minutes until golden and tender.
  6. Serve with roasted meat, or on its own with spicy quark or sour cream.
