Finely chop the ginger and boil water in the kettle.
Pour a little water (about 1 cm covered on the bottom of the pot) into the pot. When the water starts to boil, throw in the ginger and sugar. Let cook for at least half a minute.
Add the boiled water and simmer on a low heat for 10-15 minutes.
Depending on your taste, you can then pour off the tea or enjoy it directly in the cup with the ginger pieces.
