- Wash the pepper and cut into strips. Wash the chillies and cut into rings.
- Heat both together with the lemon juice in a pan and simmer for 15 minutes.
- Add the vinegar, stir and pour into a tall vessel. Puree the paste and add the olive oil. Season with a little salt.
- Transfer the piri piri sauce into a (ketchup) bottle, screw-top jar or glass.
