Instructions

  1. Wash the potatoes and place on a baking sheet with their skin on. Put the potatoes in the oven preheated to 150 degrees for 50-55 minutes.
  2. Then peel the potatoes while they are still hot and put them through the potato press twice. Add the butter, potato flour and egg yolk and mix well. Finally, season the mixture with salt and nutmeg.
  3. Place the dough on a work surface dusted with potato flour and roll up noodles as thick as a finger with the ball of your hand.
  4. Cook the potato noodles briefly in boiling, salted water until they come to the surface, then leave to cool on a rack. Up to this point, the potato noodles can be prepared and stored covered in a cool room.
  5. To finish, fry the potato noodles in clarified butter until they have a crispy crust.
