Homemade Shawarma Instructions

  1. Season 2 chicken breasts (350 g total) on both sides with salt, black pepper, and spices to taste.
  2. Heat 50 ml vegetable oil in a large skillet over low heat.
  3. Fry the chicken for 7.5 minutes on each side until golden brown and the internal temperature reaches 74 °C (165 °F).
  4. While the chicken cooks, cut 150 g Peking cabbage into thin strips.
  5. Cut 60 g red cabbage into thin strips.
  6. Cut 100 g pickled cucumbers lengthwise into 4 pieces each.
  7. Cut 1 tomato into semicircles, first removing the hard core.
  8. Grate 150 g hard cheese on a coarse grater.
  9. Mix together 100 g mustard, 100 g mayonnaise, and 50 g ketchup to make the sauce.
  10. Remove the cooked chicken to a cutting board and slice into thin pieces.
  11. Lay out a lavash bread and spread 1/4 of the mixed cabbage and sliced chicken in the center.
  12. Top with 1/4 of the pickled cucumbers and tomato pieces.
  13. Pour 1/4 of the sauce and sprinkle 1/4 of the cheese on top.
  14. Fold the lavash, tucking in the edges to seal.
  15. Repeat steps 11-14 with the remaining 3 lavash breads.
  16. Place all wrapped shawarmas on an oven rack in a preheated oven at 220 °C (428 °F) and bake for 5 minutes.
  17. Serve immediately.
