- Cut the aubergine into slices and place in a bowl with salted water for 2 hours.
- Make a dough out of flour, beer and a little salt and also let it rest for 2 hours.
- Then beat the egg white until stiff and stir into the batter.
- Remove the aubergines from the salted water and place on paper towels. Salt to taste.
- Heat the oil and pull the aubergine slices through the dough and fry one after the other. Drain on kitchen paper and layer in a shallow bowl.
- Finally pour honey or syrup over them.
