Ingredients

  • 1 large eggplant (s)
  • 125 g flour
  • salt
  • 2 tablespoon olive oil
  • 0.5 ½ glass beer
  • 2 egg whites
  • Oil, for frying
  • Honey or maple syrup

Instructions

  1. Cut the aubergine into slices and place in a bowl with salted water for 2 hours.
  2. Make a dough out of flour, beer and a little salt and also let it rest for 2 hours.
  3. Then beat the egg white until stiff and stir into the batter.
  4. Remove the aubergines from the salted water and place on paper towels. Salt to taste.
  5. Heat the oil and pull the aubergine slices through the dough and fry one after the other. Drain on kitchen paper and layer in a shallow bowl.
  6. Finally pour honey or syrup over them.
