In a bowl, mix together the oil, soy sauce, honey, mustard, and minced ginger. Season with salt and pepper to make the marinade.
Place the salmon fillets in a shallow dish, pour the marinade over them, cover, and refrigerate for 1 hour.
Heat a pan over medium-high heat and add the salmon with its marinade. Fry for 4 minutes on the first side, then flip and fry for 3–4 minutes on the second side, until the marinade caramelizes and the salmon reaches 63°C (145°F) internal temperature.
Transfer the salmon to plates, sprinkle with sesame seeds, and serve.
