Peel the pork liver from its membrane, rinse thoroughly, and cut into small pieces. Peel and finely chop the onions. Use a hand blender to purée the liver and onions until smooth. Add 1 small egg to the liver mixture. Add 3 teaspoons of semolina, 1/2 teaspoon of salt, and black pepper to taste. Mix well and let sit for 5 minutes so the semolina can absorb the liquid. Slice the bread if needed. Spread the liver mixture evenly on one side of each bread slice. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Place the sandwiches in the skillet filling-side down. Pan-fry for 2–3 minutes until the bread is golden brown and the filling is cooked through. Flip the sandwiches and pan-fry the other side for 1–2 minutes until golden brown. Transfer the cooked sandwiches to a plate. Add the remaining 1 tablespoon of oil to the skillet and cook the remaining sandwiches the same way. Serve hot immediately or at room temperature.
