Cut the iceberg lettuce into small pieces, wash and drain.
Whip the cream lightly creamy, not stiff. It should still be able to flow. Stir in the vanilla sugar and a little juice from the tangerines. Stir in lemon juice.
Put the drained lettuce in a large bowl and pour the cream sauce over it. Spread the drained mandarins on the salad. Mix and season with sugar and possibly lemon juice and serve immediately.
Tip:
If you want, you can fold in walnuts or pine nuts.
