Cook the rice in salted water according to the instructions on the packet and, after draining the water, color it with turmeric as desired. Cut the vegetables bite-sized.
Fry the tofu in a pan until it`s nice and crispy. Sweat the vegetables in another pan, add the cashew nuts after about 5 minutes. Add the fried tofu to the vegetables and mix everything well.
The mango is heated briefly in the pan just before serving. Add spices as desired. Serve the rice and tofu pan together.
