Quarter the pointed cabbage, remove the stalk and slice into fine strips. Sprinkle with 1 teaspoon of salt and knead well with your hands.
Finely dice 1 red onion, core the chilli pepper (or not), chop finely, cut the bell pepper into fine strips and fold everything into the cabbage. Whisk red wine vinegar and olive oil and mix well with the salad. Let something go through.
