Instructions

  1. Roast pine nuts without oil and then set aside.
  2. Chop the mushrooms, tomatoes and onions and sauté them in olive oil. Chop the garlic clove and add. Season with salt and pepper and deglaze with a little white wine.
  3. Wash and add spinach leaves. Finally, add the freshly grated Parmesan and the roasted pine nuts.
