Cook and drain the pasta according to the instructions on the packet.
Dice the hunting sausage into not too small pieces, finely chop an onion. Fry both ingredients with a little oil in a large pan over a high temperature until golden brown, then lower the temperature a little. Add the tomatoes, add a little water if necessary and simmer. Season to taste with sugar, balsamic vinegar, oregano, salt and pepper.
Put finished noodles in the pan, mix, sprinkle with parsley. Serve with grated cheese.
