Separate eggs. Put the flour in a bowl, mix with the milk, vanilla sugar and salt with a whisk until smooth. Add the egg yolks and stir in. Beat the egg whites with the sugar until creamy and stiff and fold into the dough. Heat approx. 20 g butter in an ovenproof pan (approx. 22 cm diameter) and pour in half of the batter. Scatter half of the raisins on top.
Bake the Kaiserschmarren in the preheated oven on the lowest rack for about 9 minutes. Then remove, quarter with a baking shovel, turn and bake for about 3 minutes.
Take out and tear the Kaiserschmarren into pieces with two forks. Sprinkle with 10 g of sugar and caramelize the pancakes in the oven or on the stove.
Prepare the second portion of the dough, then arrange it on a serving plate and sprinkle the pancakes with powdered sugar.
The Kaiserschmarren is delicious served with stewed plums or apricots and applesauce.
