Mix the milk, sour cream (makes it fluffy), yolk, sugar and flour well with a whisk, add a little salt and stir in the raisins. Beat the egg white with snow, then carefully fold it into the mixture.
Heat clarified butter in a pan, pour in the batter, bake until golden on one side, then turn. After approx. 1 min. Tear into pieces with 2 forks and bake for approx. 2 min., Poking and turning frequently.
Immediately dust the plate with powdered sugar and serve. Also very good with jam!
