Preheat the oven to 200 °. Cut strips approx. 2 cm wide and 25 cm long from the puff pastry and wrap the sausages in a spiral shape. Place on a baking sheet lined with baking paper and brush with a mixture of egg yolk and a little cream. Sprinkle with caraway seeds and bake until golden in about 10 minutes.
For the salad, cut the red cabbage into thin strips with a knife or a slicer. Knead well with salt and sugar in a bowl. Cut the apple into small pieces and the radishes into thin slices and combine with a spoonful of sweet mustard with the cabbage. Mix with apple cider vinegar and rapeseed oil and season again if necessary.
