- Peel the king prawns, leave the tail on, remove the intestines and cut with a butterfly.
- Dip in the battered egg white and dip in popped amaranth. Fry in hot vegetable oil - attention! it only takes a few seconds. Drain on paper towels.
- Peel and core the apple and immediately puree with the lime syrup and chilli sauce and season with sugar if necessary.
